Amelia's Fruit & Nut Cake

This is hands down the most delicious fruit cake I have ever had... I've never really been a fan of this type of cake to be honest, until I tried Amelia's. The best bit though, is that it is easy peasy to make.


What you'll need-


8oz Self-raising flour

8oz Demerara brown sugar

8oz Salted butter (softened)

8oz combination fruits & nuts (choose your favourites - I like pecans, dried apricots, raisins and dates)

2 large eggs


Mix everything together in a bowl till smooth and pour into circular baking dish previously lined with butter.


Bake in oven for 45 mins at 150 degrees C.


Option to sprinkle icing sugar over the top once cooled (also great to cover up any burnt bits shhhh)
