Cinnamon Apple breakfast

Recently I have been eating apples in any form I can think of, but my favourite discovery has been to have it warm, with cinnamon and almond butter, topped on yoghurt. The mix of hot & cold is so underrated for a breakfast combo and the flavours in this feel warming, cosy and perfect for this time of year.

This recipe is Gluten, Dairy and Refined Sugar free - it is also suitable for Vegans.

Let's get started!

What you'll need -

  • x1 apple (peeled and diced)

  • Coconut Yoghurt (no flavour is my favourite)

  • Half a banana, sliced

  • Teaspoon of cinnamon

  • Teaspoon of freshly grated ginger

  • Scoop of crunchy almond butter (Pip & Nut is my favourite)

How to put together -

  • Put the diced, peeled apple into a saucepan with a teaspoon of warm water.

  • Add the cinnamon and ginger and let simmer while stirring to make sure the apple is completely coated.

  • Once warm and there is no water left in the pan remove from heat.

  • In the meantime, add the coconut yoghurt to a bowl and top with crunchy almond butter (I like to melt mine a little so that it drizzles and isn't in clumps) and sliced banana before adding your steaming apple mixture to the top.

Enjoy and let me know what you think!
