Recently I have been eating apples in any form I can think of, but my favourite discovery has been to have it warm, with cinnamon and almond butter, topped on yoghurt. The mix of hot & cold is so underrated for a breakfast combo and the flavours in this feel warming, cosy and perfect for this time of year.
This recipe is Gluten, Dairy and Refined Sugar free - it is also suitable for Vegans.
Let's get started!
What you'll need -
x1 apple (peeled and diced)
Coconut Yoghurt (no flavour is my favourite)
Half a banana, sliced
Teaspoon of cinnamon
Teaspoon of freshly grated ginger
Scoop of crunchy almond butter (Pip & Nut is my favourite)
How to put together -
Put the diced, peeled apple into a saucepan with a teaspoon of warm water.
Add the cinnamon and ginger and let simmer while stirring to make sure the apple is completely coated.
Once warm and there is no water left in the pan remove from heat.
In the meantime, add the coconut yoghurt to a bowl and top with crunchy almond butter (I like to melt mine a little so that it drizzles and isn't in clumps) and sliced banana before adding your steaming apple mixture to the top.
Enjoy and let me know what you think!
